Chef's note
In my dishes you will find the catch of the fishermen from the Gulf of Alassio and the province of Imperia: the famous Oneglia Shrimps. From here also comes the fish caught with “palamito”, a long fishing line with several hooks that allows to pull the fish on board without the stress of imprisonment in the network.
Belonging to the people of the "reordi", traditional commercial fishermen, I have an almost religious respect for the fish caught with so much effort.
For this reason, the fish is the star here, and it is my duty to avoid by any means altering its natural taste.
I'll be happy then when the customer, once at home, closing his eyes will remember a taste, a taste that brings back to my place on the beach with your feet almost in the waves of the sea.
